You'll want a host that has its own datacenter, and maybe which also offers managed servers or VPS — so if you don't like what they offer for website software you can get a server (managed by them for you, or managed by you) to run the software on that you want.
I don't know for the rest of the world but for my corner of the woods (Europe) it's not that hard to find hosts that offer web hosting that have their own datacenters. Like Hetzner and TransIP.
